Gluten-free Quinoa Black-Eyed Beans Mexican Flavored Cheese burger

I have a confession to make ๐Ÿ™‚ I haven’t had a burger since going vegan ๐Ÿ™‚ I know. I should have tried making one. That’s what I did today ๐Ÿ™‚ I got tofutti cheese slices which I have been treasuring to make this yummy burger. Hola! Sabor Mexicano. ๐Ÿ™‚ Take this Maccas (Macdonalds) ๐Ÿ˜›


You need-[This makes around 6 patties]

  • 1 red onion-very finely chopped
  • 1 clove of garlic, a small piece of ginger-grated
  • 1/2 tomato-blended
  • Spinach-a handful-finely chopped
  • 1 boiled and mashed potato
  • Cooked Quinoa-1/4 cup
  • Chickpea flour-2 Tbsp, Corn flour-2 tsp
  • Cooked and mashed black-eyed beans-1 cup
  • Chili powder-1 tsp
  • Mexican taco seasoning-1.5 Tbsp (more or less depending on how strong it is)
  • Green peas-a handful
  • Salt-to taste



  • In a pan, add oil, add onion and garlic and saute until transparent and add tomato and the seasoning and cook until dry and add the spinach, beans, peas, potato and cook until dry, add a tbsp of chickpea flour and mix it well
  • Add quinoa, rest of chickpea flour and cornstarch and mix them well. Take it off heat and let it cool until you can make patties.
  • Spray oil and cook them in a shallow pan ๐Ÿ™‚

Black-eyed bean hummus

I wanted to eat hummus so bad I checked my pantry for a can of chickpeas. No luck. ๐Ÿ˜ฆย ย I usually boil one type of legume every 2 days for my protein intake (healthier than tofu). Today was black-eyed beans. Made hummus with it. Taste was AMAZING ๐Ÿ™‚

All you need are

  • half a cup of cooked black-eyed beans
  • a heaped tsp of unhulled tahini
  • few drops of lemon juice (I love lemony taste-I usually add bit of lemon zest)
  • a clove of garlic
  • a pinch of paprika
  • a pinch of cumin seeds
  • salt-to taste
  • 1 tsp olive oil

Blend them all together drizzle with olive oil and serve with mountain bread ๐Ÿ™‚

Do you crave chips? This is the best way to satisfy your craving. Tear mountain bread into bits and microwave for a min. Yummy chips. If you use corn mountain bread, add some vegan cheese on top, that’s your nachos. If you live in Australia, you could get mountain bread at Coles/Woolworths



Proxy Aloo Parata – healthier alternative

Its been a while since I had used potatoes in my food. I use it as aย occasional treat. I cooked chickpea and had boiled few potatoes along with it.

Ingredients for stuffing:ย 

  • Boiled potatoes -2 peeled,cooled and mashed
  • Salt-as needed
  • Chili powder- a tbsp
  • Asafoetida- a pinch
  • Cumin seed powder/seeds-1 tsp
  • Coriander leaves- finely chopped-3 tbsp
  • Amchur powder – a tsp(for sourness)
  • Mountain bread (the 70KCal flat bread you get in Coles/Woolworths)


  • Mix them all together and this is the stuffing for aloo parata
  • Tear the bread into two, add 2 Tbsp of stuffing in between and microwave for 30 sec.
