Raw vegan Rainbow cheesecake

If you have been reading my posts, you will know by now how much I hate measurements. I usually go by judgement and probably that’s why I have NEVER EVER got a cake/bread right. πŸ˜› It changed today though. Made this Beau…tiful rainbow cheesecake πŸ˜€ Soak a big pack of cashews (400gms) overnight. I love raw veganism πŸ™‚ So easy to make yummy food. Only thing that keeps me away from being a raw vegan is the Indian in me-‘Curries’. I am thinking of going 50-50 and cutting oil completely. Back to recipe, scroll down πŸ™‚Β 

 

imageimageLayer 1: Cinnamon Carrot Layer:

Chop around 5 baby carrots (300gms) into chunks. Not too small/big-you need to process this. Add them to a food processor. Throw in dates depending on how sweet you want, a pinch of salt, a handful of almonds, 2 pinches cinnamon and process until they come together. If they don’t, add some maple syrup and it will. Line a spring form pan with baking paper and add the carrot layer. Freeze for an hour

Layer 2: Almond Peanut-butter Cacao Layer:

To the food processor, add dates (around-15),almond meal(>1.5 cups), some salt, 2 tbsp peanut butter,cacao powder(depending on your chocoholic nature) Layer this on top of carrot layer. Back this goes into the freezer

Layer 3:Berry cheesecake layer:

To the food processor, add 3/4th of the soaked cashews(drain and add them),add 1/2 cup frozen berries(more if you love sour taste), maple syrup/agave nectar, a pinch of salt and process until smooth and fluffy. I loved this layer.Add this on top of the cacao layer. Freeze this and wait for an hour for avocado cacao layer

Layer 4:Chocolate cheesecake layer:

To the food processor, add the rest of cashews(drain and add them), 1/2 to 3/4 th of an avocado, cacao powder, a pinch of salt, maple/agave nectar until fluffy. πŸ™‚ Β Top that on berry layer πŸ™‚ Freeze. Thaw before serving πŸ™‚

      • I know πŸ™‚ Lol. That was funny. My mum turns vegan when I visit her. That is so perfect πŸ˜€ I will be taking my cookbooks home cos she loves my recipe collection. I hope I get quinoa and avocados there. My parents live very close to b’lore too-Hosur. Dunno if you would know the place. An industrial town πŸ™‚

    • I wanna cry now -happy tears-Thanks Thom πŸ™‚ I was never a sweet tooth before but since having raw vegan cakes, I am hooked to it πŸ™‚ I am leaving to India in a couple of days and will be posting mum’s recipes (she now lives there) I am sure you would love them πŸ™‚ Authentic ones

      • You’re welcome you dishes are very good and for me cakes sometimes are the holy grail of cooking especially raw cakes… i mean its a very delicious cheesecake to make and your photos capture this so well. Hey that’s awesome you are going on holiday to see your family.. i am happy for you as its the best thing to do… excited about authentic recipes too πŸ™‚ have a safe trip..       • Thanks πŸ™‚ Yea it is very exciting, but Indian climate doesn’t suit me much. I get sick there. I have taken my shots, so I guess it should be fine this time πŸ™‚ Mum is super thrilled about posting her recipes on blog-Have told her to keep it simple πŸ˜› Have a nice holiday-a break from winter πŸ™‚ Am leaving tomorrow arvo.       • Hi enjoy your holiday too πŸ˜‰ I have been to Indian several times and on the odd occasion I too have been ill. Then again my local Indian friends got sick as well. Some bugs maybe airborne which is so different to avoid… Not breathing is hard πŸ˜‰ well have a safe flight and check that they have your vegan meal on the plane πŸ˜‰

      • Thanks πŸ™‚ Lol true. Have to breathe :P. I guess I get sick cos of the street food πŸ˜› Too tasty to care about health. Last time was bad. So my doc here asked me to take shots. Shots for my South African trip have not expired yet πŸ™‚ So had to take only 2. Thanks Thom, You have a safe flight too. Vegan meal arranged. Malaysian airlines-It is usually good πŸ™‚
